Try this delicious homemade carrot and walnut cake using Western Australia's Omega walnuts for the best tasting carrot and walnut cake!

Ingredients:

1 1/4 cup brown sugar
3/4 cup vegetable oil 
3 eggs lightly whisked
1 1/2 cup plain flour
1/2 tsp baking powder
1 tsp bi-carb 
1 tsp each cinnamon, ginger and ground cardamom
5 carrots, grated
3/4 cup Omega walnuts

Frosting: 

250g cream cheese, room temp
1/3 cup icing sugar, sifted 
1 tbsp lemon juice 

Method:

Preheat oven 180 degrees, grease and line 2 x 10 inch cake tins. 
Mix dry all dry ingredients in a large bowl. 
Combine oil and eggs and pour into the dry mix, stir until just combined. Don’t over beat as the cake will become tough. 
Pour evenly into tins and bake for 45 mins or until a skewer comes out clean. 
Cool on a cake rack. 
To make the frosting, beat the cream cheese until smooth, mix in icing sugar and juice.  
Sandwich the cakes with a layer of the frosting and finish with another layer and decorate with some caramelised walnuts if you wish.
